Macaroni and Cheese

Emma is obsessed with macaroni and cheese.  She loves it.  She will eat it all day if I let her.
I started to get really, really sick of Kraft’s Mac and Cheese.  The stovetop and the Easy Mac.

I have a recipe that my family uses for “real” macaroni and cheese.  It is good, but really greasy.

I tried a few recipes on the internet and found a really good stovetop one.
It is delicious.  It’s filling.  And it’s not as greasy/oily as most recipes.

1/2 pound elbow macaroni
4 tbsp butter
2 eggs
6 oz evaporated milk
1/2 tsp hot sauce
1 tsp kosher salt
black pepper
3/4 tsp. dry mustard
10 oz sharp cheddar, shredded

In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat.
Whisk together the eggs, milk, hot sauce, salt, pepper, and mustard. Stir into the pasta and add the cheese. Over low heat continue to stir for 3 minutes or until creamy
