It is a Rachel Ray cookbook featuring kids meals. Rachael claims these recipes are for picky eaters. Emma is the worst eater ever on the planet. I swear some days she will go all day with only a few bites of food and finishing off a whole gallon of chocolate milk.
I tried this recipe tonight. I had hesitations that it would be too “spicy” for Emma, but it really wasn’t spicy at all. I got 5 stars from Pook b/c of all the protein. Emma thought she got special soup since there were “chips” on her soup. She downed it all!
I’ll definitely make this again. Pretty easy.
1 tbsp extra-virgin olive oil
2 lbs ground turkey breast (I used just 1 pound. I don’t like a lot of meat and Scott didn’t seem to notice)
1 large yellow skinned onion, chopped
1 jalapeno pepper or serrano, seeded and minced
2 cloves of garlic, minced
2 tbsp ground cumin
A couple shakes of tabasco
Palmful of fresh cilantro
2 cans (14 oz each) chicken broth
1 can (15 oz) Great Northern/white kidney beans (is this the same as Navy beans? I used Navy beans.)
We used fritos, and monterey jack cheese
Heat oil in deep skillet or pot over medium-high heat. Add turkey and cook for a couple minutes, keeping the meat moving. Add onion, minced hot pepper, garlic, cumin, hot sauce, and cilantro. Reduce heat to medium and cook 5 minutes to soften and sweeten onion. Add broth and beans. Bring to boil. Reduce heat and simmer until ready to serve.
Top bowls of chili with crushed tortillas (or fritos) and cheese.
